How to Make Chicken Biryani

Ingredients:

  • 500g chicken, cut into pieces
  • 300g basmati rice
  • 200g onions, thinly sliced
  • 150g yogurt
  • 50g tomatoes, chopped
  • 30g ginger-garlic paste
  • 5g turmeric powder
  • 5g garam masala
  • 5g red chili powder
  • 5g cumin seeds
  • 2 bay leaves
  • 4 green cardamom pods
  • 4 cloves
  • 2 cinnamon sticks
  • 30ml lemon juice
  • 50ml cooking oil
  • Salt to taste
  • Fresh coriander and mint leaves, chopped
  • Saffron strands, a pinch soaked in 30ml warm milk

Directions:

  1. Rinse the rice and soak it in water for 30 minutes. After that, drain it well.
  2. Heat the cooking oil in a large pot. Add in the cumin seeds, bay leaves, cardamom pods, cloves, and cinnamon sticks. Sauté these spices until they smell great.
  3. Now, add the thinly sliced onions to the pot and fry them until they are golden brown.
  4. Stir in the ginger-garlic paste, turmeric, red chili powder, and salt. Cook this mixture for a few minutes to let the flavors blend.
  5. Add the chicken pieces into the pot and brown them well. Then, mix in the chopped tomatoes and yogurt. Cook until the oil starts to separate from the mixture.
  6. Pour in the lemon juice and half of the chopped herbs. Cook until the chicken is tender.
  7. In another pot, bring water to a boil. Add the drained rice and cook it until it’s about 70% done, then drain it again.
  8. Layer the cooked chicken and the partly cooked rice in the same pot. Top everything with the saffron milk, the remaining herbs, and a little drizzle of ghee.
  9. Cover the pot tightly and let it simmer on low heat for 20 minutes. After that, let it rest for a few minutes before serving.
  10. Fluff the rice gently with a fork and serve hot.
