Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced

  • 1/2 teaspoon paprika

  • 1/4 cup chicken or vegetable broth
  • 1/4 cup dry white wine (optional)

  • 2 tablespoons chopped fresh parsley

Directions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat.
  3. Add the minced garlic to the melted butter and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Add the shrimp to the skillet and season with Cajun seasoning, paprika, red pepper flakes (if using), salt, and black pepper. Cook the shrimp for 2-3 minutes per side until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.
  5. In the same skillet, add the remaining 2 tablespoons of butter, chicken or vegetable broth, and white wine (if using). Scrape any browned bits from the bottom of the skillet.
  6. Let the mixture simmer for 2-3 minutes to reduce slightly.
  7. Add the cooked pasta to the skillet and toss it in the Cajun butter sauce to coat evenly.
  8. Return the cooked shrimp to the skillet and toss everything together gently.
  9. Squeeze the lemon juice over the shrimp and pasta. Sprinkle chopped parsley on top.
  10. Taste and adjust the seasoning if needed.
