Tropical Delight: Pineapple Juice Cake Recipe

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup pineapple juice (canned or fresh)
  • 3 large eggs
  • 2 teaspoons baking powder

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the pineapple juice, and mix until well combined. Begin and end with the dry ingredients.
  7. Pour the cake batter into the prepared baking pan, spreading it evenly.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Optional Pineapple Glaze:

  1. In a small bowl, whisk together powdered sugar, pineapple juice, and vanilla extract until smooth.
  2. Drizzle the pineapple glaze over the cooled cake.
